Cheap & Tasty Grain Pilaf
November 15thHere’s another one of our favorite vegan recipes. It makes enough for leftovers, and almost all of the ingredients can be purchased from bulk bins. It’s cheap, tasty, nutritious, and very flexible.
Multigrain Pilaf with Seeds
You can substitute in whatever grains you have on hand—just make sure you change the liquid ratio to match. I’ve made the recipe as is, but I’ve also made it with millet, wheat berries, and quinoa.
I use vegetable broth and substitute canola or vegetable oil for the butter to make it vegan. I also like to add pumpkin seeds, and I use sundried tomatoes in place of the currants. I get the ones that aren’t packed in oil. If leeks are expensive or out of season, I just use some shallots or onions.
